I did it once before, now I haven't been able to find my way back. I'd like to customize the background which shows up behind the buttons on the ConnectKaraoke show screen (Search by Song, etc.)

I found it. For those who come after me, it is accessed through the "Settings" button on the bottom right of the "Remote Queue" window.
